03/04 Third professional ham cutting workshop in Belgium

On the 3rd of April 2023, from 9:00 to 17:30, the Official Spanish Chamber of Commerce in Belgium and Luxembourg will organise the third edition of the professional ham cutting workshop, in collaboration with The Cortador Academy, first school in BeNeLux to learn how to cut ham professionally. The course will be carried out by the Maestro Cortador José Cristóbal Álvarez García, who obtained his renowned diploma in the well-known Spanish school “Escuela Internacional de Cortadores de Jamón”.

The workshop is aimed at professionals in the horeca sector and ham enthusiasts who wanted to deepen their interest in the art of cutting and plating this gourmet product. During the day, the participants will be able to study the different types of ham and their characteristics, as well as the regulations that concern the sector. They will also learn in a theoretical and practical way the main techniques to professionally cut from ham to bone.

The course will take place in Excellis – Rue Colonel Bourg, 105A – 1140 Bruxelles.
